Why Is Starbucks Putting Protein in Your Latte? (And What It Has to Do With Jet Fuel)

Starbucks now sells a cold foam topping that packs up to 36 grams of protein into a single grande, more than you'd get from a 4- to 5-ounce chicken breast. It comes in banana, salted caramel, matcha, and a sugar-free vanilla you can stack with "protein-boosted milk" for good measure. The chain rolled it out across the US and Canada last fall and has since expanded into Asia-Pacific.
Why is Starbucks suddenly acting like a supplement brand?
Starbucks is just the most visible symptom of something much bigger happening across the entire food industry — and the real driver isn't a wellness fad. It's a drug.
Here's the mechanism underneath all of it. GLP-1 drugs - Ozempic, Wegovy, Mounjaro, and now oral versions like Eli Lilly's newly launched pill - work by suppressing appetite, in some cases cutting overall calorie intake by as much as 21%. That's the headline effect. The less obvious one is what happens to muscle. People losing weight on GLP-1s lose muscle mass at a dramatically faster clip than people losing weight through diet alone, several times the rate seen with non-drug weight loss. Protein is the practical countermeasure, which is why one industry executive recently described it not as a trend but a "design requirement."
That demand has run straight into a supply problem. Whey protein concentrate prices have nearly tripled over the past year, crossing $13 a pound; whey isolate is up roughly 50%. Manufacturers report they're sold out or locked into contracts through next year. Dairy processors have committed $11 billion to new capacity, but most of it won't be online for years. Some companies are switching to cheaper substitutes like milk protein isolate, and now even that price is starting to climb.
The downstream effects are showing up in places you wouldn't expect. Drugmakers and protein brands are obvious winners. So, oddly, are apparel retailers, as consumers shift spending from buying more food to buying "better" food. Restaurants are feeling it unevenly. Dinner traffic has dropped among regular GLP-1 users, and breakfast has taken a hit too, particularly among higher-income users skipping the sugary coffee drinks that built chains like Starbucks in the first place. Protein is getting squeezed into syrups, chips, yogurt tubs, and coffee toppings, marketed to people who are trying, by design, to consume fewer calories. A class of drugs engineered to make people eat less has triggered a multibillion-dollar industrial scramble to pack more into the less that people do eat.
And the ripple effects don't stop at food. Because GLP-1 users tend to weigh less, some analysts estimate the shift could lower airline fuel consumption by roughly 514 million gallons a year, saving carriers about $2 billion annually.
